Tasting Notes: The Chablis Grand Cru of Vaudésir is a very steep vineyard that is sited between Valmur and Preuses and stretches out the two slopes on a comb of Kimméridgien limestone. Olivier Leflaive, buy in grapes from both sides, keeping with the dates of the different grape harvesting so as to obtain perfect maturity in the fruit. Generous and rich the Vaudésir wraps creamy baked pear fruit and warm pastry notes around a firm acid core. This is a great example of grand cru Chablis from a fine vintage.

Varietal: 100% Chardonnay

Pairing: Ideal with lobster, Dublin bay prawns and bass but also the cheeses such as the Cîteaux.
